Apricot Vanilla Cold Brew Recipe

A 12-hour cold brew steeped with dried apricots and vanilla bean for a smooth, lightly fruity coffee concentrate you can mix to taste.

Ingredients
  

Cold Brew
  • 100 g coarse-ground medium-dark coffee about 1 cup
  • 60 g dried apricots, roughly chopped about 8-10 pieces, unsulfured preferred
  • 1 vanilla bean split lengthwise and scraped
  • 800 ml filtered cold water for steeping
Apricot Simple Syrup (Optional)
  • 100 g granulated sugar
  • 100 ml water
  • 30 g dried apricots about 4 pieces
To Serve
  • as needed ice cubes
  • to dilute cold filtered water or oat milk 1 part concentrate to 1 part liquid

Method
 

Make the Cold Brew
  1. Add the coarse-ground coffee, chopped dried apricots, and vanilla bean seeds and pod to a 32 oz mason jar.
  2. Pour in 800 ml of cold filtered water and stir gently until the coffee is fully saturated.
  3. Seal the jar and place it in the back of the fridge. Steep for 12 hours - no longer than 14.
  4. Set a fine-mesh sieve over a large bowl and pour the cold brew through it to remove the solids.
  5. Line the sieve with cheesecloth or a paper coffee filter and strain the liquid a second time until clear. Discard the spent coffee and apricots.
  6. Transfer the concentrate to a clean sealed jar and store in the fridge until ready to serve.
Make the Apricot Simple Syrup (Optional)
  1. Combine sugar, water, and dried apricots in a small saucepan over medium heat.
  2. Stir until sugar dissolves, then simmer gently for 10 minutes until the liquid turns a pale golden color.
  3. Strain out the apricots and let the syrup cool completely before storing in a sealed jar in the fridge.
Serve
  1. Fill a glass with ice cubes.
  2. Pour in roughly 120 ml of cold brew concentrate.
  3. Add 120 ml of cold water or oat milk and stir to combine.
  4. Add a drizzle of apricot simple syrup if you want extra sweetness, and garnish with a slice of dried apricot on the rim.

Notes

If the apricot flavor is too faint after straining, stir in one tablespoon of apricot syrup directly into the concentrate jar and taste again before serving.
