Ingredients

  • 2 tablespoons black sesame seeds
  • 1 cup unsweetened almond milk or any plant-based milk
  • 1 –2 pitted Medjool dates for natural sweetness
  • 1 shot espresso or strong brewed coffee
  • Pinch of sea salt
  • Sweetener or grass-fed collagen optional, to taste

Method

  1. Toast sesame seeds: Heat a dry skillet over medium heat. Toast the black sesame seeds for 3–5 minutes, stirring often until fragrant. Don’t let them burn.
  2. Make sesame paste: Blend the toasted sesame seeds with the pitted dates and a splash of water until smooth. Add more water or milk if needed to reach a spreadable paste consistency.
  3. Warm the milk: In a small saucepan, heat the almond milk over low heat until warm. Whisk until frothy. You can stir in sweetener or collagen at this stage if you like.
  4. Combine with coffee: In your favorite mug, stir the sesame paste into the espresso or brewed coffee until well mixed.
  5. Finish and serve: Pour the frothy almond milk over the sesame-coffee mix. Sprinkle with a pinch of sea salt for a perfect flavor balance. Serve hot and enjoy.

Notes

  • You can make a larger batch of sesame paste and store it in the fridge for up to a week to save time.
  • For an iced version, let the milk cool before pouring it over ice.
  • If you want it stronger, add an extra half-shot of espresso.
  • Works well with oat milk for a creamier texture.
