- In a saucepan, melt sugar over medium heat, stirring constantly until golden amber (about 8-10 minutes).
- Slowly whisk in butter and cream until smooth. Let cool slightly.
- Use a French press with 3 tbsp of dark roast coffee per 16 oz of hot water.
- Let steep for 4 minutes, then press and pour.
- Pop kernels in coconut oil in a covered pot.
- Toss with melted butter and a drizzle of caramel.
- Bake at 250°F for 10 minutes to keep crisp.
- Pour brewed coffee into mugs.
- Drizzle warm caramel syrup over the surface.
- Top with caramelized popcorn.
- Stir gently and serve immediately.
Notes
For a healthier option, substitute caramel with dark chocolate drizzle. For a bolder taste, try a smoky dark roast like Blue Bottle Coffee. A mesh strainer helps separate popcorn from excess oil for a lighter texture.
