Ingredients
  

  • ½ cup granulated sugar
  • ¼ cup unsalted butter Kerrygold recommended
  • ¼ cup heavy cream
  • 1 tsp Kosher salt
  • 3 tbsp dark roast coffee grounds
  • 16 oz hot water
  • ½ cup popcorn kernels Pop Secret recommended
  • 2 tbsp coconut oil
  • 1 tbsp melted butter
  • 1 tbsp caramel syrup from above

Instructions
 

  • In a saucepan, melt sugar over medium heat, stirring constantly until golden amber (about 8-10 minutes).
  • Slowly whisk in butter and cream until smooth. Let cool slightly.
  • Use a French press with 3 tbsp of dark roast coffee per 16 oz of hot water.
  • Let steep for 4 minutes, then press and pour.
  • Pop kernels in coconut oil in a covered pot.
  • Toss with melted butter and a drizzle of caramel.
  • Bake at 250°F for 10 minutes to keep crisp.
  • Pour brewed coffee into mugs.
  • Drizzle warm caramel syrup over the surface.
  • Top with caramelized popcorn.
  • Stir gently and serve immediately.

Notes

For a healthier option, substitute caramel with dark chocolate drizzle. For a bolder taste, try a smoky dark roast like Blue Bottle Coffee. A mesh strainer helps separate popcorn from excess oil for a lighter texture.
