Dragon Fruit Iced Coffee with Coconut Milk

A three-layer cold coffee drink with dragon fruit, coconut milk, and cold brew that takes 10 minutes to assemble.

Ingredients
  

Dragon Fruit Coconut Base
  • 150 g frozen pink pitaya (dragon fruit) chunks thawed for 5 minutes for easier blending
  • 120 ml full-fat coconut milk well chilled
  • 2 tbsp simple syrup adjust to taste
  • 1 tsp fresh lime juice optional, brightens the flavor
To Build
  • 2 cups ice cubes divided between 2 glasses
  • 180 ml cold brew coffee concentrate store-bought or homemade, well chilled

Method
 

Make the Dragon Fruit Base
  1. Add the pink pitaya chunks, coconut milk, simple syrup, and lime juice to a blender. Blend on high for 45 to 60 seconds until completely smooth.
  2. Pour the blended mixture through a fine-mesh sieve into a bowl or jug, pressing gently with a spoon to push it through. Discard any seeds or fibrous bits. Chill the base in the fridge for at least 5 minutes if it warmed up during blending.
Assemble the Layers
  1. Fill each tall glass with 1 cup of ice cubes.
  2. Pour the dragon fruit coconut base evenly between the two glasses, filling each about one-third full. It should sit at the bottom as a thick pink layer.
  3. Hold a long-handled spoon or bar spoon face-down just above the surface of the dragon fruit base. Slowly pour 90 ml of cold brew concentrate per glass over the back of the spoon so it flows gently onto the ice without crashing through the pink layer.
  4. Serve immediately with a wide straw. The layers will hold for 3 to 4 minutes before blending. Stir before drinking to combine all three layers.

Notes

  • Use frozen pink pitaya cubes for a thicker base and faster chill without extra ice.
  • Strain blended dragon fruit through a fine-mesh sieve to catch seeds before layering.
  • Add simple syrup to the base only, not to the cold brew, to preserve the flavor contrast.
  • Keep cold brew concentrate refrigerated until the moment you pour it to maximize layer clarity.
  • Do not stir the drink before photographing; the layers collapse quickly once mixed.
