Persimmon Spice Latte with Brown Sugar Foam

A fall espresso drink built on simmered Hachiya persimmon puree, warm spices, and steamed milk - no syrup bottles needed.

Ingredients
  

Persimmon Spice Base
  • 1 ripe Hachiya persimmon large (about 200 g flesh); must be very soft, almost jelly-like
  • 60 ml water
  • 1 tbsp light brown sugar adjust to taste
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cardamom freshly ground preferred
  • 1/2 tsp fresh ginger finely grated
  • 1/4 tsp vanilla extract
  • 1 pinch pinch of fine salt
To Assemble
  • 2 espresso double shots (120 ml total); or 160 ml strong brewed coffee
  • 300 ml whole milk or barista oat milk for dairy-free
  • 1 pinch ground cinnamon per cup; to dust on top

Method
 

Make the Persimmon Spice Base
  1. Slice the ripe Hachiya persimmon in half and scoop the flesh into a small saucepan. Discard the skin and any seeds.
  2. Add the water, brown sugar, cinnamon, cardamom, grated ginger, vanilla extract, and salt to the pan.
  3. Warm the pan over medium-low heat. Stir and cook for about 30 seconds until the spices are fragrant, then reduce to low.
  4. Simmer gently for 6 to 8 minutes, stirring occasionally, until the mixture is soft and thick enough to coat the back of a spoon.
  5. Remove from heat and transfer to a blender or use an immersion blender to puree until completely smooth. Press through a fine-mesh sieve into a small bowl, pressing firmly with a spoon to extract all the pulp. Discard the stringy solids left in the sieve.
  6. Taste the base and add another 1/2 tsp of brown sugar if the persimmon was on the tart side.
Pull Espresso and Steam Milk
  1. Pull two double shots of espresso, about 60 ml each. If using a moka pot or strong drip coffee, brew 80 ml per serving and let it sit for 1 minute to settle.
  2. Steam the milk to around 60 C / 140 F - it should feel hot but not scalding on the back of your hand through the pitcher. Froth to a smooth, pourable microfoam. If you don't have a steam wand, heat the milk in a saucepan over medium heat and use a handheld frother for 20 to 30 seconds.
Assemble the Lattes
  1. Pre-warm two 10 oz mugs by filling them with hot water for 1 minute, then pour it out.
  2. Spoon 2 heaping tablespoons of the persimmon spice base into each mug. Pour the hot espresso over it and stir well to combine - the base should dissolve into the espresso without any lumps.
  3. Pour the steamed milk slowly over the espresso mixture, holding back the foam with a spoon, then spoon the foam on top.
  4. Dust with a pinch of ground cinnamon and serve immediately.

Notes

  • Only use a Hachiya persimmon that is completely soft - even slightly firm will make the puree astringent.
  • Simmer the puree on low heat; a rolling boil scorches the fruit and flattens the spice aroma.
  • Strain through a fine-mesh sieve for a smooth, cafe-style texture with no stringy bits.
  • Pre-warm mugs with hot water for 1 minute so the latte stays hot for the full drink.
  • Make the spice base in a double batch and refrigerate - each latte then takes about 4 minutes to assemble.
