Strawberry Matcha Espresso with Fresh Layers

Ingredients
  

Strawberry Puree Layer
  • 100 g fresh strawberries, hulled about 6 to 8 medium berries, ripe
  • 1 tsp honey or maple syrup optional, only if berries are tart
  • 1 tsp lemon juice brightens the berry flavor
Matcha Layer
  • 1 tsp ceremonial-grade matcha powder sifted
  • 60 ml hot water, 80 C / 175 F not boiling
  • 80 ml whole milk or oat milk cold, straight from the fridge
Espresso Layer
  • 60 ml freshly pulled espresso 1 double shot, cooled for 60 seconds
To Serve
  • 4 large ice cubes to 5 cubes

Method
 

Make the Strawberry Puree
  1. Add the hulled strawberries, lemon juice, and honey (if using) to a small blender. Blend on high for 30 seconds until completely smooth.
  2. Pour the puree through a fine-mesh sieve into a small bowl, pressing with a spoon to extract all the juice. Discard the seeds and pulp. Refrigerate the puree while you prepare the other components.
Whisk the Matcha
  1. Sift 1 tsp ceremonial matcha powder into a small bowl to break up any clumps.
  2. Add 60 ml of water heated to 80 C / 175 F. Whisk in a brisk W or M motion for 30 to 45 seconds until the matcha is fully dissolved and a light foam forms on the surface.
  3. Stir in the cold milk. Let the mixture sit for 2 minutes at room temperature to cool slightly before pouring.
Pull the Espresso
  1. Pull a double espresso shot (60 ml) using your espresso machine or moka pot. Set it aside to cool for 60 seconds. Do not pour it hot directly over ice.
Build the Layers
  1. Add 4 to 5 large ice cubes to a tall clear glass (400 ml minimum).
  2. Pour the cold strawberry puree over the ice as the base layer.
  3. Slowly pour the cooled matcha-milk mixture over the back of a spoon held just above the strawberry layer. This slows the pour and keeps the layers from merging.
  4. Finally, pour the espresso slowly over the back of the spoon again, aiming for the top of the matcha layer. You should see three distinct color bands - red at the bottom, green in the middle, and dark brown at the top.
  5. Serve immediately with a wide straw. Stir before drinking to combine all three layers, or sip in layers for a more sequential flavor experience.

Notes

  • Use water at 80 C / 175 F for matcha - boiling water makes it bitter.
  • Strain the strawberry puree through a fine-mesh sieve for cleanest separation.
  • Pull espresso fresh and let it cool 60 seconds before pouring.
  • Large ice cubes are non-negotiable - small ice melts too fast and dilutes layers.
  • The drink is best consumed within 5 minutes of assembly for full layer contrast.
