Ingredients

  • 2 tablespoons ube extract or 1–2 tablespoons ube powder
  • 1 cup milk dairy or any plant-based option
  • 1 tablespoon vanilla syrup adjust to taste
  • 1 shot espresso or ½ cup strong brewed coffee
  • Optional: whipped cream
  • Optional: purple sprinkles or decorations

Method

  1. Heat the milk in a saucepan over medium heat. Do not let it boil — just warm it until hot and steamy.
  2. In a small bowl, mix the ube extract or powder with vanilla syrup until smooth.
  3. Pour the ube mixture into the heated milk and whisk until it’s fully blended into a pastel purple color.
  4. Brew your espresso or strong coffee and pour it into a serving cup.
  5. Slowly pour the ube milk mixture over the coffee to create layers.
  6. (Optional) Top with whipped cream and purple sprinkles for a fun finish.
  7. Serve hot, or let it cool and pour over ice for an iced version.

Notes

  • Ube powder may need a bit more whisking than extract to blend smoothly.
  • For a stronger ube flavor, add an extra ½ tablespoon of ube powder or a few extra drops of extract.
  • Oat milk gives a creamier texture, while coconut milk adds a tropical flavor.
  • If you like sweeter lattes, add more vanilla syrup to taste.
